Gin with House-made Bitter Lemon and Soda
DRINKS
Bramble Smash
1 ½ oz . Vodka or other preferred spirit 1 oz . Jam or preserves 1 oz . Lemon or lime juice Splash club soda Herb garnish ( mint , thyme or basil work best )
Mix jam , citrus and spirit together in a shaker . Shake , then pour over ice in a glass and top with soda . Garnish with herb sprig .

Aperol Fresca
1 ½ oz Aperol 1 oz . Guava puree 1 oz . Fresh-squeezed grapefruit juice ¼ oz . Fresh lemon juice Prosecco splash
Add all ingredients into a cocktail shaker , except for the prosecco . Shake vigorously for 5 seconds . Fill a rocks glass with crushed ice and strain the cocktail into the glass . Add a splash of prosecco for a floater . Garnish with an edible orchid and orange peel .

2 oz . Bourbon 1 oz . Peach puree 10-12 Fresh mint sprigs 3-4 dashes Orange oil
Muddle mint , with bourbon and puree , in bottom of glass . Fill glass with nugget ice and garnish with mint sprig .

1 ¾ oz . Vodka or gin 2 oz . Lychee puree ¾ oz . Lemon juice
1 / 5 oz . Rose syrup 1 pinch Salt Rose petal for garnish
Combine vodka or gin , lychee puree , lemon juice , rose syrup and salt in cocktail shaker . Shake and double strain into a chilled Martini glass . Garnish with a rose petal

Gin with House-made Bitter Lemon and Soda
For a savory twist , try shaking in a sprig of fresh thyme or rosemary with the gin and bitter lemon before adding the sparkling water . This drink is also delicious with ¼ oz . of green Chartreuse added .
1 ½ oz . Gin 1 oz . House-made Bitter Lemon ( see below ) 2 to 3 oz . Chilled sparkling water Lemon wheel Fresh thyme ( or other fresh herb )
Measure the gin and house-made Bitter Lemon into a cocktail shaker . Fill with ice , cap and shake . Strain into a Collins glass filled with fresh ice . Top with sparkling water and stir . Garnish with lemon and thyme sprig .
Makes 1 cocktail .
House-made Bitter Lemon : 4 large Sunkist lemons 1 ½ cups Sugar 2 cups Water
Wash lemons and cut the ends off . Then slice each lemon in half lengthwise and each half into 4 slices ( pick out any seeds ). Add the lemons , sugar and water to a blender cup . Process on high until the mixture is smooth . Place mixture in a medium non-corrosive pan and bring to a boil over medium high heat . Let boil for 1 minute . Remove from heat and let cool to room temperature , then fine strain . Store refrigerated for up to 2 weeks . Makes about 20 ounces .
