GO BEYOND THE BASIC MARGARITA

Everybody loves a Margarita : By most surveys , it ’ s been the top-selling cocktail for decades . And the start of summer — not to mention the May 5th holiday celebrating Cinco de Mayo — is a great time for the tequila-based classic .
While there ’ s nothing wrong with the original , bartenders have been developing fresh spins on the Margarita , from unusual fruits and spices to decadent , dessert-like sips . Here are a few to try out .
Strawberry Orchid
2 oz . Blanco tequila 1 oz . Fresh lime juice ½ oz . Agave nectar 1 oz . Strawberry purée 2 dashes Balsamic vinegar 10 mint leaves
Combine tequila , lime juice , agave and mint in a shaker and muddle . Add strawberry purée and balsamic and shake with ice . Strain into a new glass with fresh ice .

Smokin ’ Hot Pineapple
2 parts Hornitos Plata tequila ( or other blanco tequila ) ¾ part Jalapeño rosemary syrup * ½ part Fresh pineapple juice ½ part Fresh lemon juice 2 dashes Angostura bitters
Combine ingredients in a shaker with ice and shake vigorously . Pour into a highball glass with ice . Garnish with a pineapple chunk and rosemary sprigs .
* For jalapeño rosemary simple syrup : Combine equal parts sugar and water with 1 jalapeño slice and 4 rosemary sprigs and bring to a boil . Let cool and strain into a jar .

1 ½ oz . Tequila or mezcal ½ oz . Cointreau ½ oz . Crème de cacao Dash of orange bitters Mexican cinnamon , freshly ground if possible Chocolate syrup , for the rim Chocolate shavings and whipped cream , for garnish
Tamarindo Lindo Margarita
1 ½ oz . Tequila ½ oz . Lime juice 2 oz . Tamarind pulp ½ oz . Cointreau ½ oz . Agave
Rim an Old Fashioned glass halfway with tajin , chili and salt , and fill with ice . Measure ingredients into a pint mixing glass . Fill with ice and shake . Strain into Old Fashioned glass and garnish with a dehydrated lime wheel .

Rim a coupe glass with chocolate syrup and chocolate shavings . Shake all ingredients with ice until cold , then strain into glass . Garnish with whipped cream and more chocolate shavings .
