Eliza Hoar and the 50 / 50 Martini
ELIZA HOAR IS DIRECTOR OF BARS FOR THE ROSEWOOD MIRAMAR BEACH AND THE MANOR BAR IN IN MONTECITO, CA.
Depending on my mood, I usually go in one of two directions. A classic Negroni is always a favorite for its balance and simplicity: equal parts spirit, bitterness and sweetness working in perfect harmony. The beauty of the drink is that every ingredient matters, which is why the vermouth and gin are especially important to me.
My preferred vermouth is Cocchi Vermouth di Torino, which brings richness, spice and depth that truly elevates the cocktail. For the gin, I gravitate toward something with a slight citrus note, though a classic London Dry is always preferred. Finished with an orange twist, it’ s timeless, intentional, and always fits the moment.
My other choice, especially after a truly long day, is a Bombay Sapphire or Hendrick’ s Gin 50 / 50 Martini, slightly dirty, with a lemon twist. There’ s something especially satisfying about the softness and elegance that comes from splitting the base evenly between gin and dry vermouth, while the olive brine adds just enough savory depth to make it feel restorative after a demanding day. Switching between these two gins keeps it interesting. Hendrick’ s, with the olive brine, creates a cooling, savory moment, while Bombay Sapphire leans into a brighter citrus finish.
