St . Patrick ’ s Day may be mostly about the beer , and the Irish whiskey , but the March 17 holiday falls just before the first day of spring . So it ’ s a fine occasion to celebrate all things Irish with a cocktail — perhaps one with a touch ’ o the green . Here are a few specialty drink recipes that we like .
Dublin After Dark
2 oz . Whiskey 1 oz . Shaker & Spoon ginger-turmeric syrup ¾ oz . Lemon 8 oz . Boiling water
For a hot cocktail : Fill a Toddy glass with 6 oz . of boiling water to condition the glass for hot contents to follow . Allow the water to heat the glass for 1 minute . Pour out and discard the hot water . Add the ginger-turmeric syrup , lemon juice and whiskey . Fill the remainder of the glass with 2 oz . of boiling water . Garnish with a dehydrated lemon wheel and mist with orange oil . For a cold cocktail : Build as a classic , non-traditional sour . Add lemon juice , ginger-turmeric syrup and whiskey to an ice shaker tin . Hard shake and double strain into a rocks glass over fresh cubed ice . Garnish with dehydrated lemon wheel and mist with orange oil .

Opposites Attract
1 ½ oz . Damrak gin ( or VirGin nonalcoholic spirit ) 1 ½ oz . Coconut water ½ oz . Lime juice ½ cup Honeydew melon chopped 4 Sugar snap peas 4 Cucumber slices 2 Large basil leaves 1 Basil sprig- garnish 1 tsp . Finely shredded coconut - rim for glass
Lightly muddle honeydew , cucumber , sugar snap peas and basil leaves in a shaker Add gin or VirGin , coconut water , lime juice and ice . Shake and double strain over fresh ice in a large rocks glass that has been rimmed with finely shredded coconut . Garnish with a slapped spring of basil .

Pot of Gold
1 ½ oz . El Bandido Yankee Reposado tequila ½ oz . Dry Curaçao ½ oz . Ginger liqueur ½ oz . Lime juice 1 ½ oz . Pineapple juice 2 Dashes Aromatic bitters Jalapeño slices
Muddle a few jalapeño slices in a cocktail shaker . Add all additional ingredients and shake with ice . Strain into a glass full of fresh crushed ice . Garnish with some small pineapple cubes , jalapeño slices and some pineapple fronds .

Raspberry Coffee Cocktail
1 oz . Chambord liqueur 1 ½ oz . Slane Irish whiskey 2 oz . Coconut water ½ tsp . Instant coffee
Rim a highball glass with coconut flakes or shredded coconut . In a shaker , combine ingredients with ice and shake . Strain into highball glass over fresh ice and garnish with a berry .

Mizu Midori Sour
1½ oz . Vodka ½ oz . Midori melon liqueur ¾ oz . Fresh pineapple juice ¼ oz . Yuzu juice Fever Tree yuzu-lime soda
Stir together vodka , Midori , and juices in a Collins glass with ice . Top with yuzulime soda . Garnish with an Amarena Toschi or Luxardo cherry .

Macha Margarita
1 ½ oz . Santo Blanco tequila 2 oz . Milk product or substitute 1 tbsp . Matcha powder ¼ oz . Honey
Combine all ingredients in a highball glass . Garnish with mint bouquet .
