Flight West Miami’ s Maduro Old Fashioned cocktail a local reinterpretation of an Old Fashioned made with Four Roses bourbon infused with plantains for several days. It’ s finished with walnut bitters and garnished with a crisp plantain chip.
I’ ve always looked for sweeteners that integrate more seamlessly with the base spirit, enhancing rather than masking its character. After living in Miami for nearly 20 years, I’ ve become a huge fan of the city’ s diverse, multicultural food scene.
Maduros— fried sweet plantains— are one of my favorite examples, and since I’ m already a big believer in infusions, I decided to experiment with them. The result is a distinctive sweetness and depth of flavor that feels both familiar and unexpected.
I love making this cocktail because it puts a subtle twist on a classic without straying too far from its roots. At the same time, it’ s a nod to the city I’ ve called home for two decades and the flavors that make Miami unique.
2 ½ oz. Maduro-infused Four Roses single barrel bourbon * 2-3 dashes Walnut bitters Plantain chip for garnish
Add ingredients to a mixing glass, add ice. Stir to desired temperature. Strain into rocks glass over large ice cube. Garnish with plantain chip( use mini clothes pin).
* For Maduro-infused bourbon: Use 6-7 maduro plantain slices per 750 ml. of whiskey. Infuse in a sealed container for 2-3 days; the longer the better, but a few
days will impart significant flavor. Strain plantains and bottle the infused whiskey solution. Keeps well for at least 4 weeks.
