Casual dining chain Outback Steakhouse has teamed up with Ritual Zero Proof on two non-alcoholic cocktails. It’ s a new segment for the restaurant and the largest scaled on-menu program for the brand.
The No Worries’ Rita, a take on the Outback Classic Margarita, is made with Ritual Agave Spirit Alternative and available in mango, watermelon, blackberry and strawberry flavors; it’ s priced at $ 7.49. The Tropic Like It’ s Hot, priced at $ 7.99, is a tropical blend of Ritual Rum Alternative, mango, pineapple and lemonade; it’ s shaken and finished with a Tajin spice rim.
The zero-proof drinks made their debut in August at 580 Outback locations across the U. S. They will be permanent additions to the restaurant’ s Booze- Free Bevvies menu.
Paragraph, a new alcohol-removed wine brand, launched in June across the U. S. and Europe. Founded by Steve Arora, winemaker Duncan Shouler; and Familia Muga, one of Spain’ s most respected wine families, Paragraph is for wine drinkers who seek moderation and balance without giving up the ritual, pleasure and sophistication of a real glass of wine.
The debut release is a Spanish tempranillo from high-altitude vineyards in Spain with vine age of 30 to 50 years old, aged in French oak barrel for two to four years prior to blending. Alcohol is delicately removed using low-temperature vacuum distillation followed by leading aroma recovery technology, which delivers aromatic expression and vinous character.
The wine is then rested in bottle for a minimum of two months before release. The result is a wine low in sugar( approximately 1g. per 100 ml.), below 0.5 % ABV, and free from added flavors.
Paragraph launched simultaneously in the U. S., U. K., Spain, Switzerland and Iceland, with a suggested retail price of $ 38 per 750-ml. bottle. Distribution will include traditional wine importers, fine wine retailers, and ontrade placements in fine dining and hospitality settings where wine expertise is central to the experience.
Luxury operator Pebble Beach Resorts recently unveiled a series of cocktails made with fresh seasonal ingredients from California’ s Central Coast. The company’ s Stillwater restaurant offers a zero-proof drink called Whale Watcher, which features a no-alcohol whiskey and peach ginger and lemon flavors. Here’ s how to make it at home.
1 ½ oz. Ritual non-alcoholic whiskey alternative 1 oz. Peach purée 1 oz. Sweet ginger purée ¾ oz. Lemon juice Club soda Thyme bouquet garnish
Add all liquid ingredients except club soda to a shaker. Shake and strain into a Collins glass. Fill with ice, top with club soda and garnish with a thyme bouquet. Lightly smack the thyme before serving to release aromatics.
